Gillie and Marc Wine Sparkling Passion Fruit Cocktail

A delightful summer brunch cocktail, this recipe makes about 750ml.


  • 2 cups of water
  • 2 cups of caster sugar
  • 1 cup of passion fruit pulp (fresh or tinned)
  • the juice of half a lemon
  • 1 tsp citric acid
  • 1/2 tsp salt

To serve

1. Place all of the ingredients in a saucepan, over a medium heat, stir until sugar is dissolved

2. Bring to the boil, remove from heat and allow to cool

3.Taste the mixture and add extra lemon juice if too sweet

4. Serve 1 part of passion fruit mixture to 3 parts of Sparkling Wine, over lots of ice and garnish with fresh mint
