      Gillie and Marc Wine Collection Sparkling Chardonnay Pinot

      A generic term used for any sparkling wine that is crafted accordingly to the original "recipe" of Champagne.

      All Champagne and most high-quality sparkling wine are made by this process. The wine must undergo a second fermentation in the bottle itself, to produce the extremely fine bubbles.

      Also known as méthode Champenoise, méthode Classique and Metodo Classico.

      Fruit is sourced from the Adelaide Hills, South Australia.

      To ensure fresh primary fruit characters and natural acidity, the Chardonnay and Pinot Noir grapes are harvested early during vintage.

      The fruit is machine harvested after midnight, in the cool hours. Fermented separately the two grape varieties, with varying proportions, are put through malolactic fermentation.
